Of course, it is too early to talk about a strong trend, but there are some very bright signs emerging. Hence, the special offer of Sam’s Steak House, the first in Ukraine, where the technology of aging meat for steaks has been introduced, is very interesting.

It is known that in USA there is a strict system for assessing and assigning the quality level of meat in the order of its decline: Prime, Choice, Select, Standard, Commercial, Utility, Cutter and Canner. However, in Ukraine there is no such gradation; it is about marbling of meat. In the market you can often find enough marble meat, which depends on the way of growing animals and animal feed, but it does not change the price in the market.


It is quite difficult to find the “right” meat for steaks. Sam’s Steak House works with “Kozyatinsky myasokombinat” (Kozyatin meat processing plant), one of the best in Ukraine. Its products meet the criteria of standards, and this manufacturer is one of the few who can provide stability in quality, including the age of the bulls, suitable for the size of the steaks. This is especially important if you take into account the restaurant cooks steaks only from three parts of animal carcass that guarantees the right quality: sirloin, chuck and loin parts.

In addition, the restaurant uses meat aging technology. Unaged meat is very tough.  During the aging process fibers in meat dissolve; therefore, the unaged meat will still be tight. Sam’s Steak House works with a local product and applies special meat aging technology; it differs from the traditional wet technology. The technology is aging meat by protecting the wall of meat cells with beef fat, which allows preserving the taste molecules – parts of the carcass are placed in special containers with fat where the meat ages. In addition, beef fat is a natural barrier to bacteria. With this ripening, the fibers of the meat dissolve, the meat “rests” and becomes soft.


To implement this technology, in 1996 Sam’s Steak House Kiev invited a German expert who conducted personnel training, supervised the construction of professional refrigerating chamber for meat aging and controlled the process as a whole. This is very interesting, and the restaurant has long practiced excursions to the Meating Room, where in the evening on weekdays or during the day on weekends everyone can visit the meat workshop and see all the stages of meat aging.

Meat countries have long established their traditions of roasting and consuming meat. For example, in Brazil and Argentina, the most popular steaks are medium roast from grain-fed meat; in Morocco – only well-fried, in USA they like huge steaks with varying degrees of roasting, etc.

In Kiev, many like rare steaks, but this tradition has formed relatively recently. Customers are more likely to order steaks with more regular roasting on the advice of the chef or waiter. For example, the Tenderloin steak from the leanest, cleanest fillet is recommended to eat rare fried to avoid dryness, but Rib Eye, on the contrary, is recommended not less than medium fried so that the internal fat melts. For taste, these nuances are very important.
